LEEK SAVORY CAKES WITH MORTADELLA BOLOGNA PGI

Ingredients (For 4 serves)

  • Mortadella bologna pgi, 2 oz
  • Montasio cheese cut into dices, 3 oz

  • leeks, cut into thin slices, 11 oz
  • cream, 7
  • salt and pepper, 1 tablespoon
  • eggs lightly beaten, 2

First of all cut the leeks into thin slices.

Heat one tablespoon olive oil in a no sticking pan and add the leeks. Let them cook slowly for a couple of minutes until tender, if necessary add some water. Be very careful not to burn them as they are really thin and will be brown immediately if you do not pay attention.

Let them rest and cool for a couple of minutes. Meanwhile, in a separate bowl whisk eggs with cream, add salt and pepper.

When the leeks are cool add them to the egg mixture and add the cheese cubes together with mortadella cut into thin slices.

Pour the mixture into individuals baking pan and bake in preheated oven at 180°C for at least 30 minutes checking that the mixture is completely cooked and solid.
